You could actually devote more than one day to each of the seven days that God created the earth. Each child can create their own creation book having seven days to record what God created each day. You can use your own ideas on what to use for each creation day. For example, on the fourth day the Lord created the sun, the moon, and the stars so you could have the children cut out pictures of each of these and glue them to the page.
