Pumpkin Roll

It’s to make a pumpkin roll. Add the eggs, sugar and canned pumpkin to a large mixing bowl then blend with the hand blender. Next add flour, baking soda, ground cinnamon and ground nutmeg to the mix and blend. Add chopped walnuts and stir with the slotted spoon. Mix then pour into a baking pan and bake. Flip it over onto parchment paper and roll it up. Then make the filling and spoon and smooth it. Roll up your pump roll, wrap it in plastic and freeze. Take it out and slice it up and plate it.
