Whether you are planning on an intimate gathering of just immediate family, or want to gather a large group, for mom, these brunch recipes will make for a delicious and memorable meal. German Pancake-This easy recipe yields an impressive results. Best of all it only takes a few minutes to turn out this yummy dish. Makes 4 generous servings.



Ingredients:

3 large eggs
1/2 cup all-purpose flour
1/2 cup milk, preferably whole
1/4 teaspoon kosher salt
1/2 teaspoon vanilla extract
2 tablespoons unsalted butter
2 tablespoons fresh lemon juice (optional)
1/2 cup fruit jam (optional)
2 tablespoons confectioners’ sugar

Directions: Heat oven to 400° F. In a large bowl, whisk the eggs to combine. Add the flour and whisk until smooth. Add the milk, salt, and vanilla and mix until incorporated; set aside. Add the butter to a large cast-iron skillet and transfer to oven until the butter melts. Remove from oven and quickly pour the batter into the hot skillet. Return to oven and bake until the pancake is puffed and golden, about 15 minutes. Drizzle the lemon juice (if using) over the pancake. Spread the jam (if using) evenly over the top. Sprinkle with the confectioners’ sugar. Serve immediately

Oven Bacon-Not only does this bacon taste great, it takes the mess out of cooking it. This method also works well for large groups.

Ingredients:

1 1/2 pound(s) sliced lean bacon
2 1/2 teaspoon(s) coarsely ground black pepper

Directions: Preheat oven to 400 degrees F. Arrange bacon slices in 2 jelly-roll or roasting pans, overlapping the lean edge of each slice with the fat edge of the next. Carefully and evenly sprinkle pepper over bacon slices. Place pans on 2 oven racks and bake bacon 25 minutes, switching pans between upper and lower racks halfway through baking, until bacon is golden brown and crisp. Remove bacon to paper towels to drain; keep warm.

Orange Glazed Blueberry Scones-These delicious scones will be memorable for your brunch guests. Be sure to serve them with softened butter or for a decadent treat sweetened whipped cream. You can make the scones at least one day ahead of the brunch.

Ingredients

2 cups unbleached flour, plus more for rolling berries 
1 tablespoon baking powder 
1 teaspoon salt 
1/3 cup sugar 
1/4 cup unsalted butter, chilled and cut in chunks 
3/4 cup buttermilk or cream 
1 egg 
1 pint fresh blueberries 

Directions: Preheat oven to 400 degrees F. In a large bowl, sift together flour, baking powder, salt and sugar; mix thoroughly. Cut in butter using 2 forks or a pastry blender. Keep in mind that the butter pieces should be coated with flour and resemble crumbs. In another bowl, mix the buttermilk and egg together, and then add to the flour mixture. Make sure that you only mix the ingredients just until combined. Do not overwork the dough. Gently roll blueberries in flour to coat; this will help prevent the fruit from sinking to the bottom of the scone when baked. Fold the blueberries into batter, being careful not to bruise. Drop large tablespoons of batter on an ungreased cookie sheet. Bake for 15 to 20 minutes until brown. Cool before applying orange glaze.

Orange Glaze:

Ingredients:

2 tablespoons unsalted butter 
2 cups powdered sugar, sifted 
2 oranges, juiced and zested 

To prepare Orange Glaze: Combine butter, sugar, orange zest, and juice over a double boiler. Cook until butter and sugar are melted and mixture has thickened. Remove from heat and beat until smooth and slightly cool. Drizzle or brush on top of scones and let glaze harden.
